Video on Skype in China works fine, and it seems to use less bandwidth than iChat. Still, I prefer iChat for video though, when it works, because iChat auto-adjusts the white balance on the video from my USB webcam giving a better quality image whereas Skype does not.
Are you using iChat currently in China, or was your experience using it in China from some months or years ago? I did not have the same amount of troubles with iChat when I was living in Weifang, Shandong, last year, so I suspect that the problem is most likely due to my ISP here in Beijing or perhaps problematic iChat servers that my machine connects to from this location.
